The study was conducted at Old Town Ensaimada located in Barangay San Nicolas 1 Magalang, Pampanga. It provides information concerning the management operation of the firm, in terms of investments, organization, production, marketing and finance. This study offers information that might be needed in putting up a business. For researchers, this will serve as a reference material to those who want to undertake similar studies along this topic. Primary data were gathered through a series of personal interviews with the owner and other staff of Old Town Ensaimada. The needed data were on the areas of (1) investment, which consisted investment activities; (2) organization, composed of organizational chart, duties and responsibilities as well as human resource management; (3) operation, consisted the firm area, location and production process or the operation flow chart; (4) marketing, which composed of 7 C's of marketing; and (5) finance, consisted income statement and balance sheet. Secondary data were gathered from available literature and other reading materials, such as from the Internet and libraries. The firm is a sole proprietorship type of business registered under the name Old Town Foods owned by Mrs. Ma. Teresita Tayag Paras. Problem identification and analysis was done regarding the organization and operation of the firm. The following are the problems encountered by the firm: (1) in organization: low employee performance; (2) in production, shortage supply of raw materials; and (3) in marketing, the location. Alternative courses of action were formulated for the existing problems of the firm. Based on evaluation, the following are recommended to improve the business operation of the firm. For organization, the firm should train their employees to know the basic standards in baking. Also, the firm should use alternative ingredients and lastly, the firm should find a location wherein more people will come and buy.
