The postharvest characteristics of four varieties of mungbean (Vigna radiata Wilczek) was investigated during the period of December to March 2019. A laboratory cxpcriment was conducted at Altcrnative Low Input Agriculture System (ALIAS) Research and Development and the experiment was laid out in a Completely Randomized Design (CRD) with four replications while the sensory evaluation was laid out using the Randomized Complete Block Design (RCBD). The treatments that were used in the study were as the follows: Tl - Pag asa 3, T2 - Pag asa 7, T3 - Pag asal9, T4 - Pag asa2 1. Characteristics of munbean length of seeds, width of seeds, weight of seeds, and weight of sprout, germination percentage were assessed. Specifically, this study aimed to develop food products using the four varieties of mungbean and to determine the effects of the postharvest characteristics of the four varieties of mungbean on the levels of acceptability of turon de mongo, pan de mongo, and hopia de mongo in terms of appearance, texture, taste, and overall acceptability. It also determined the cost of production of turon de mongo, pan de mongo, and hopia de mongo. Based on the findings, the researcher recommends the varieties of pag asa 7, pag asal9 and 21 in the production of mungbean because it has low cost input. In terms on the germination of germination three varieties, Pag asa 7, 19, and 21 are fast to germinate. On the other hand, there was a significant difference on the length of seed, width of seed, weight of seed, and weight of sprout, germination percentage. The use of four varieties of mungbean (pag asa3, pag asa7, pag asal9 and pag asa21) in making the turon de mongo, pan de mongo, nad hopia de mongo is recommended. The nutrients analysis of turon de mongo, pan de mongo, and hopia de mongo is recommended. Further study on the shelf life of turon de mongo, pan de mongo, and hopia de mongo is recommended. Further study of four varieties of mungbean in preparation of turon de mongo, pan de mongo, and hopia de mongo is recommended. An increase in the ROI% of 100.22% was noted in hopia de mongo. It is recommended that further studies should be conducted preferably on the effect of pustharvest characteristics of varieties of mungbean and other grain crops to come up with more conclusive result.
